What a food & beverage stand has to do

A food stand is a working kitchen in a hall that was not designed to be one. Water, drainage, refrigeration, heat and waste all have to be solved before the first graphic is considered, and the venue will have firm views on all of them.

Once that is handled, the design problem is queueing: sampling creates a crowd, and a crowd that spills into the aisle will be asked to stop. The counter has to absorb the queue inside your own footprint.
